Sorbitol, a water‑soluble polyol from glucose hydrogenation, has 60% the sweetness of sucrose and only 2.6 kcal/g. It functions as a humectant and sweetener in food and pharmaceuticals, maintaining moisture in confectionery, pet food and shredded coconut, and improving texture in sugar‑free desserts and low‑calorie beverages.
