Dibasic calcium phosphate is synthesized by reacting phosphoric acid with calcium chloride and sodium hydroxide. Calcium carbonate can also replace calcium chloride and sodium hydroxide as an alternative raw material. Anhydrous dibasic calcium phosphate features low toxicity and non-irritating properties, which allows its extensive application in oral pharmaceuticals and food products. Functional Applications in Food It serves as a leavening agent, dough conditioner, nutritional fortifier, dietary supplement and yeast nutrient. Dibasic calcium phosphate is available in anhydrous and dihydrate forms. It occurs as a white, odorless and tasteless powder with good air stability. It is practically insoluble in water and ethanol, yet freely soluble in dilute hydrochloric acid and dilute nitric acid.
